I love Rachel Ray and her 30 minute meals. She can get a little obnoxious sometimes, and nevermind her EVOO…but her recipes are great and doable on a weeknight. Last night I made Uptown Pork Chops and Apple Sauce: Roast Pork Tenderloins with Escalloped Apples and it was really yummy.
Except I have this problem where I cook meat (mainly chicken and pork) for WAY too long because I’m paranoid that it’s never done enough. So most of the time Andy ends up politely eating dry meat :( He’s great about it, but I’m so frustrated that I never seem to get it right. Oh well, there’s always next time!
