So I could be a cool blogger and take fantastic pictures of these to entice you, but I’m far too lazy so just recipes will have to do :) Fall is here as far as I’m concerned and the following are fantastic for the season.
Cafe Mocha
I love Cafe Mocha’s from Starbucks and Timmy Ho’s, but my stepmom showed me how to make them at home. I think I was studying for some physics test in high school when she surprised me with it (man that was years ago!)
– Brew a cup of coffee like usual
– Mix in a packet of instant hot cocoa
– Stir in some half and half
– Top with a spoonful of coolwhip
So yummy and so easy :)
Pork Chops with Apples and Dressing
Recipe from my aunt Mick, very easy and fall appropriate. I always have the worst time cooking meat (I over cook, for fear of making someone sick by under cooking). Pork and chicken are usually what end up the worst, but this recipe managed to turn out great. I halved it for just Andy and I, but here’s the full recipe.
– 2 packages of stuffing mix
– 1 can (21 oz.) apple pie filling (or the real stuff if you happen to have it)
– 6 boneless pork chops
Heat oven too 375 degrees. Prepare stuffing as directed on package.
Spread pie filling onto bottom of 13 × 9 inch baking dish sprayed with cooking spray; top with stuffing and chops on top. Cover with foil. Bake 30 minutes; uncover. Bake and additional 10 minutes or until chops are cooked through.
***Just a tip, we also buy our meat in bulk so I usually get a big ‘ole pork loin and cut it into 1″ chunks to get my boneless pork chops. SO much cheaper than buying the individual chops. I do the same thing with ground beef, buy the big 6+ pounder and separate into smaller freezer bags. I think cutting, trimming, repackaging meat is one of the most icky icky icky jobs (I’d rather clean your toilet) but it does save a lot of money.
